Hari tu teringin nak makan blueberry cheese tart. So, i searched for the recipe, and found this. I persuaded husband to take me to G*iant to get the ingredients and there you go. I spent the whole of saturday morning making blueberry cheese tart. Alhamdulillah, it turned out well. Husband and all the others loved it. I managed to take some to the office for my staff. Its very easy to make. Eventhough i have never baked any tarts/pies before, but i watch alot of baking and cooking programmes especially on AFC. And thus. I rasa nak tepek pulak recipe tu. Tapi, it's not my recipe ya.. Here goes:
Pastry Dough
125gm Unsalted butter (cut in cubes)
40gm Icing sugar
1 egg (medium and beaten)
220g plain flour
1/2 tsp Vanilla essence
To prepare;
a) Add in all ingredients in a mixing bowl. Mix and blend until a smooth dough is formed. *u may use your hands or you may use a food processor/mixer.
b) Put the dough in a cling wrap and let to rest in the fridge for 30 minutes.
c) Roll out pastry, cut out circles to fit tart mould. *I just pressed the dough into the tart moulds.
d) Prick the base with a fork
d) Bake in oven for 8-10mins at 175deg C.
Filling
250gm Cream Cheese (I used spreadable cream cheese)
3/4 cup Icing Sugar
1 egg (medium and beaten)
1/2 cup Whipping cream
1 tsp vanilla essence
Blueberry filling
Note: You may want to half the filling ingredients or double the pastry dough ingredients because the pastry dough requires more or less 1/2 of the cream cheese filling.
To prepare;
a) Beat cream cheese and beaten egg until well incorporated
b) Add in vanilla essence, sugar and whipping cream. beat until creamy and well blended.
c) Spoon/pipe the mixture into the pre-baked tart shells.
d) Add in the blueberry filling. use a satay skewer/wooden tooth pick to swirl it to create marble effect.
e) Bake tart in oven for 15 mins at 175 deg. C. Remove from the oven to cool a while before serving
